Leon Mazairac is the chef de cuisine of Restaurant Karel 5 and leads a kitchen where purity and surprising flavors come together, entirely in line with his motto: “simplicity is complex enough.”
Every three months, our menu undergoes a complete transformation, with a new theme, a fresh layout, and of course exciting, innovative dishes. The style of the kitchen always remains true to a balance between classic technique and modern creativity, with quality consistently guaranteed.
Together with his right-hand man, Jent van Cappelle, Leon forms a strong and passionate duo. Together, they shape a kitchen driven by craftsmanship, dedication, and an inexhaustible love for the finest and most authentic products.

Marco Westra, maître and SVH Master Host, is the familiar face of service at Restaurant Karel 5. With many years of experience and a great passion for the profession, he and the team ensure every day that guests experience refined and personal service, where attention to detail and genuine hospitality are at the heart of everything they do.
As Maître at Restaurant Karel 5, I find it very important that the guest always comes first. Everything revolves around our guests, ensuring they experience a pleasant and unforgettable evening. Of course, I do not do this alone, but together with the entire team. Hospitality is a true craft, and together with my wonderful colleagues, I strive to make every guest feel welcome and special when spending an evening in our restaurant. The kitchen creates exquisite dishes, which we complement with carefully selected wines. Together, this forms a complete experience in which gastronomy, service, and hospitality come together to create a memorable and refined evening.
Together with Assistant Maître Floris and Assistant Sommelier Thijmen, Marco forms a close-knit front of house team within Restaurant Karel 5. Together, they shape a service experience driven by craftsmanship, attentiveness, and a genuine passion for gastronomy and hospitality. With an eye for detail and a sense of refinement, they ensure that every dining experience is perfected down to the smallest nuances.
Restaurant Karel 5 warmly welcomes you from Wednesday to Saturday, between 6:00 PM and midnight. The kitchen is open until 9:00 PM, so you can enjoy our carefully prepared dishes in time.
On Sundays, Mondays, and Tuesdays, we are closed to give our team the opportunity to recharge, spend time with their family and loved ones, and find new inspiration.
